“The philosophy here is flavour, flavour, and even more flavour.” – Ian Palmer, InchDairnie Distillery Founder.
“In terms of flavour innovation, other distilleries will be looking at InchDairnie for years to come.” – Dave Broom, world renowned whisky writer.
InchDairnie Distillery is leading a new era in Scotch whisky, dedicated to discovering the flavours of the future. Through precision distilling and a deep commitment to Fife provenance, it blends nature, science, and technology to push the boundaries of flavour.
The distillery uses bespoke equipment to extract more flavour and explore unusual grains, yeasts, and distillation styles. It embraces seasonal variation—outdoor fermentation and switching between Spring and Winter barley—creating nine distinct spirits annually, each offering unique flavour experiences.
A true disruptor, InchDairnie launched the world’s first Scottish rye whisky, RyeLaw, and in May 2025 released KinGlassie, its first single malt made from heavily peated Fife barley and matured entirely on-site.
Though not open to the public, InchDairnie occasionally offers exclusive tours. Its cask club, limited to just 30 casks a year, invites members to visit and be part of its pioneering journey
