Walpole member Heathrow VIP has provided the world’s most luxurious airport service for over twenty years. Their service includes chauffeur driven collection from London, a private lounge with butler service, private security and a chauffeur driven drop-off to the airplane’s door.
One of the most challenging aspects of the service is the complimentary fine dining options that guests can enjoy whilst they are in their private lounge. With Spring around the corner, the team at Heathrow VIP are gearing up for the release of their new menu. Harrish Mareachealee, Head Chef, explains more:
“At Heathrow VIP, we aim to ensure that our guests feel as “wowed” as they would in any luxury hospitality environment around the world. We pride ourselves on providing exceptional fine dining options, especially due to the nature of the kitchen in which we operate.
There is a significant difference in terms of the equipment we can use compared to other fine dining establishments. Due to the regulations regarding a confined environment within an airport, we are not permitted to use gas or even a blow torch. Most of our meals have to be cooked using an oven, so we have to be really creative with the way execute dishes, constantly experimenting innovative methods for achieving the right consistencies, textures and tastes. We are partnered with Jason Atherton, so recreating some of his more creative dishes can be even more challenging!
It sounds cliché, but great food starts with great ingredients. By ensuring that we are sourcing all of the best produce, we give ourselves the best platform on which to create the dishes we want. As we change the menus every season, we need to constantly adapt and think about the next challenge. It truly is a demanding environment, but that makes it all the more rewarding when we produce the amazing dishes we do for our guests. I am very proud of my team and what we have been able to achieve here.
We’re releasing our Spring menu soon, focusing on options that will energise our guests, such as protein detox shots with our protein partners, Form Nutrition, healthy breakfasts, vibrant salads, exciting mains and delicious desserts. I love the freshness associated with Spring, so I’m really excited to get in the kitchen!”
