Walpole member COMO Metropolitan London is giving its guests the chance to take a gastronomic trip around the world without ever leaving Mayfair with its new ‘A Taste of COMO’ dining concept. Led by Executive Chef Ruben Briones and his team, this culinary experience consists of three themed pop-ups throughout 2022. The current is 'A Taste of the Ocean', which is running every Wednesday to Saturday (6pm to 10:30pm) from now until 19th November 2022.
As a native of the Asturias, a Spanish region especially known for its world-class seafood, Chef Briones has a passion for cooking fish, crustaceans and shellfish. For this pop-up, Chef Briones will demonstrate his culinary expertise in preparing seafood in different fashions; guests can indulge in raw oysters with ‘Gazpachile’ dressing, daiquiri apple and coriander, the chef's innovative crispy fried calamari bao-guette or opt for the lighter cured citrus monkfish, grapefruit and roasted vegetable salad. This menu, designed by Chef Briones, is meant to be paired with glasses of Taittinger Champagne.
