Designed to further define their respective identities and sense of place within Scotland, the menus take an innovative approach to incorporating ingredients found both locally and within the hotel’s existing ecosystem.
Beginning with the Century Bar – the hotel’s much-loved social hub – Head of Mixology, Michele Mariotti, and his talented beverage team have taken a revitalised approach to modern classics, inspired by the building's near 100-year history and 850-acres of countryside surroundings.
The menu is divided into four unique categories, including the Glorious Outdoors; rich, spirit driven and herbaceous drinks inspired by the Scottish landscape, the Glamorous Ballroom; decadent drinks to celebrate the beginning of the new roaring twenties, the Relaxing Parlour; warm, sweet and comforting cocktails for a rainy day or after a decadent dinner, and finally, the Lively Public House; light, long and easy drinks to enjoy at any time of the day.
Michele, who honed his craft at some of the world’s very best hotel bars, including The Savoy’s American Bar in London, has based the new menu on the unique versatility of the space which means different things to different people at different times of day.
Amongst the grandeur of the Century Bar, with its art deco inspired design, dramatic wood panelling and floor-to-ceiling windows, guests can choose from a selection of cocktails – simplified with just three tasting notes per drink – as well as the largest collection of whiskies in the hotel. Guests can expect some contemporary twists, too; including foraged flora and fauna from the local Perthshire countryside and, in some instances, leftover ingredients – such as beurre noisette, created using leftover croissants – which would have otherwise gone to waste.
Come early next year, Mariotti and his team will unveil the next instalment in their mixology programme, this time in the hotel’s iconic American Bar.
The bar is open from 11am to 1am daily, with lunch served from 12pm until 5pm.
